But instead of bracketing flavors into the binaries of culture, one hotelier wants to build bigger tables for everyone to take a seat. For him, food has always been more than just an experience of plating and palettes!
As one of the first people to be sent from a handicapped school to a regular school, Rahul‘s view of the world is perhaps shaped by his own life. A student of Welham Boys, Dehradun, he found firm support in his parents, who enabled him to live life fearlessly, without letting the Cerebral Palsy overpower his dreams. Having started working at the tender age of 15, Rahul has worked across departments at the organization. He has done this in order to understand the nuanced function of every single aspect of the business. He has worked in maintenance, marketing, accounting and then ultimately moving on to the bigger picture and managing it all.
Rahul was the founder of the restaurant Dusk which is a part of the Le Sutra Hotel & Resort in Visakhapatnam. Dusk continues to be a favorite spot for the people of the city as they keep returning to have a great time! He also started a South-Indian cuisine cafe on his own called Cafe Bean Garu in Mumbai. He then moved on to start multiple projects under his hat ranging from Deli by the Blue to One Tight Wrap and Anglo-Indian Cafe, Lonavala. He also has 2 new projects that he is currently working on coming to Lonavala. Out Of The Blue, being a pioneer in the industry, holds strong and true to its name for the last 23 years, and continues to be a place where something is always happening.
At Le Sutra Hospitality, he’s building kitchens and spaces that’s deeper than gourmet. Working closely with farmers, organic growers and self-taught gardeners from villages across India; Rahul believes in starting every cooking experience with the purity of ingredients. When it comes to building bigger tables, even the restaurant’s hiring policy has plenty of seats for everyone. With a staff of several hearing-impaired employees working across properties, Rahul’s trying to build a space that changes the language of running it. Special needs workers are empowered at DEEDS, an NGO in Dehradun & Mumbai that trains them in life skills for a self-made tomorrow.

A philosophy that reflects in some of his earliest work- as the conceptualiser of the Le Sutra Hotels, where every room was designed to reflect ancient Gunas. He has powered through and worked hard each day with the zeal to wake up each morning and create magic! Today, he’s taken over the reins of the family business from his father and envisions the Hospitality business that doesn’t die at the altar of frustrated kitchens, small profit margins, and fierce competition. He builds a community that finds meaning through food, bringing people closer to their truest essence.
He is currently working on his dream project, The Blue Gourmet, to create bean to bar chocolates, chocolate products, gourmet and unique ice creams which in time will be available pan India.
